Blue Cheese, Griddled Pear and Walnut salad with Flatbreads

Serves 4


Ingredients


Flatbreads


250g plain flour, plus extra to roll out
2 tsp baking powder
½ tsp sea salt
225ml natural yogurt
2 tbsp olive oil


Salad


60g walnut halves
1 tbsp runny honey
4 firm conference pear, sliced lengthways, ½cm thickness, pips removed
1 tbsp olive oil
juice half a lemon
150g blue cheese such as Roquefort or Gorgonzola
80g watercress


Dressing


2 tbsp extra virgin olive oil
1 tbsp white wine vinegar
2 tbsp runny honey
1 tbsp lemon juice
Salt and freshly ground black pepper


 


Method



  1. To make the flatbreads, sift the flour, baking powder and salt into a bowl then make a well in the centre of the flour and pour in the yogurt and oil, stir with a round bladed knife until the mixture comes together.

  2. Tip the dough out onto a lightly floured surface and knead for 2 minutes until smooth.

  3. Cut the dough in to 8 equal pieces and roll out on a lightly floured surface into oval shapes approximately 18 cm long and 12 cm wide at the centre.

  4. To cook the flatbreads heat a griddle pan and place a couple of flatbreads on the pan and cook for about 3 minutes on each side until browned and well risen. Keep warm.

  5. Preheat the oven to 180°C (350°F/Gas 4) and place the walnuts onto a baking tray lined with parchment then drizzle over the honey. Cook for 10 minutes until the walnuts are roasted and sticky. Set aside to cool.

  6. Place the pears in and bowl and drizzle over the olive oil and lemon juice. Heat a griddle pan then cook the pears in small batches for about 1 minute on each side.

  7. Meanwhile for the dressing whisk all of the ingredients together in a small bowl and season with salt and pepper

  8. To assemble the salad divide the watercress between 4 plates, add pears, walnuts and some crumbled cheese. Drizzle some dressing over each plate and serve with warm flat breads.


Tip


As an alternative try roasting the walnuts in maple syrup.
